DELISH Kale-Sausage-Potato Soup

This shit will WARM YOUR SOUL!  I mean it.  My hubby was like "who turned on the heat??"  And it wasn't even spicy! LOL

EASY and cheap (its around $10 for an entire pot)

-1 lb ground sausage (I get mine at Aldi for around $2.50)
-1 bunch Kale (Schnuck's: 99 cents!)
-1 bag (5lbs) yellow potatoes (Schnucks: $2.99)
-8 C chicken broth (2 boxes)

You can also add in onions, beans, rice, or anything you want or have on hand!  And you can add mashed potato flakes to make it thicker.


Brown sausage (and onions if you wish) and drain.  Cut up potatoes (after you wash them) and throw them in (I do not peel my potatoes).  Wash kale and rip from stem and rip into little pieces and throw it in.  Pour in the broth and sasuage and BAM!  Done.  Oh yes, cook on high until done or throw in a crock pot. 

Very cheap, very easy.  And VERY VERY GOOD!  ESP. if you get the mashed potatoes in a red carton (the big one---I have no idea what kind this is, when I do, I'll post it) to use a thickener. 

Top with salt & pepper & Parmesan cheese :)

Chili Mac

1-box Aldi Mac-n-Cheese (gluten-free or not-they have both)
1-can Brookdale chili (from Aldi too, the meat kind is gluten free)
1/4 C milk

Mix all together for a yummy (and seriously cheap) chili-mac! 

Serve with salad.

Italian Beefy Noodles

Mmmmmmmmm this is soooo good!

-Rice Vermicelli Noodles
-Leftover beef (I used potroast, so good!)
-Italian dressing

Make your noodles and rinse them.  Throw some Italian dressing in the pot, throw in the meat, warm it up, throw your noodles in.  Serve and top with more Italian noodles.

Hawaiian Meatballs and Rice

I found this recipe today on the website below, and decided to include it here because its is simple, cheap and easy, especially if you already had some of these ingredients on hand. 

Hawaiian Meatballs and Rice


  • 1 can (8 oz each) crushed pineapple in juice, divided
  • 1 cup Hunt's® Original Barbecue Sauce, divided
  • 1 pound ground round beef (85% lean)
  • 2-1/4 cups instant brown rice, uncooked, divided
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • PAM® Original No-Stick Cooking Spray
  • 3/4 cup frozen chopped green bell pepper


  • Stir together half the pineapple and 3/4 cup barbecue sauce in small bowl; set aside.
  • Mix remaining pineapple, remaining 1/4 cup barbecue sauce, beef, 1/4 cup rice, salt and pepper in large bowl until well blended. Shape mixture into 24 meatballs, about 1-1/4 inches each. Place in large skillet sprayed with cooking spray; spoon sauce mixture over meatballs.
  • Bring to a boil over medium-high heat. Stir gently and cover. Reduce heat to medium-low; simmer 16 to 18 minutes or until meatballs are cooked through (160°F).
  • Meanwhile, prepare remaining 2 cups rice according to package directions, omitting salt and butter and adding bell pepper. Serve meatballs and sauce over rice.
